Harvested by hand from 22 Sept – 14 Oct with warm and sunny days.

soft destemming of the grapes without crushing. Fermentation in stainless steel tank under controlled temperature and with daily remontages. Maceration for 20 days.

Matured for 16 months in new Allier French oak barrels with 3 rackings.

Bottled without filtration or clarification.
