Pastrami, salami, prosciutto: These are cuts of meats found in delis and charcuteries, with a long history behind them. Commonly, wine is not too far from where they can be found as well, which is not surprising for those who have paired them together before. I’m going to take you through an educational and practical guide on how you can pair for your next charcuterie party, or perhaps what bottle may fit your next picnic.
Before I go into pairing, it is important to understand salt’s effects on wine. Salting or brining is an important part of producing cured meats. After eating something salty, a wine’s sweetness becomes more pronounced. Tannins feel softer in the mouth. The body typically becomes fuller. It is up to the individual eating the food to decide whether these are more desirable characteristics to them. I will be addressing my pairings by assuming that you, the reader, would prefer these characteristics.
Prosciutto is salted and dry-aged ham with different grades and varieties. The most commonly recognised name would be prosciutto di Parma, or Parma ham; a salty and thin cut from a leg of ham found in antipastos and charcuteries. It is as expensive as it is salty. Dry, sparkling white wines (like our Val D’oca Blu Millesimato Extra Dry Prosecco) and tannic, fruity red wines (like La Château La Bastide Rouge) would fit perfectly.
