| Vinification 釀造過程 |
The harvest is spread over several weeks in order to obtain perfect maturity for all berries. This naturally depends on the grape variety but also the different positions and altitudes of the vineyards in the appellation. Depending on the year, the winemaker might choose to de-stem the grapes or not before crushing. The temperature is kept high during the fermentation (28°C) and the maceration lasts 4 weeks, in order to obtain a good extraction of tannins and colour. Nose – Delicate Provençal bouquet showing hints of Herbs de Provence and garrigue alongside aromas of red and black fruits, black olives and cinnamon. Palate – Following through from the nose, the palate is warmly generous and fleshy, with a smooth and elegant finish.
